I can see them eating stuff on the rocks and glass. I saw them eating a little mysis, but most of it is too big( I may chop it up). I have flooded them with live baby brine but I have not seen them eat one. Good thing their tank has lots of critters.

They will eat them quickly, but might not be too excited about frozen food until the snacks are gone. Keep trying though, once they are on frozen well, they will grow faster. Hikari is a sw shrimp, that is smaller and there is even a "Mini Mysis" you can get in a bubble pack. Try to get them eating FW PE because it has a higher fat content. They grow really quick once they start PE.

What does PE stand for? They are starting to eat the mysis pretty well. I am shocked by how big of ones they can eat. Could they hurt themselves doing this?

No, they won't hurt themselves eating large pieces. Sometimes it will take 2 " gulps" to get one piece Dow, though! PE is Piscine Energetics brand. Locally, we can get it from Bird World or The Aquarium. It is a fw shrimp ANC I usually don't recommend fw food for sw animals but it has a different fat content, and smaller high energy fish really seem to grow faster eating it. Once they are eating regularly and their torsos have filled out, feed more Hikari SW shrimp. Fish can get fatty livers from too much fat.
